食谱:虾仁芦笋意大利细面

材料(4人份):

意大利细面 336克
牛油 56克(分成2份,各28克)
橄榄油 2汤匙
蒜茸 2汤匙
辣椒粉 ¼ 茶匙
虾仁(去壳剥筋) 450克
盐 适量
胡椒粉 适量
白酒 125毫升
柠檬汁 ½ 个
香芹(剁碎) 3汤匙
芦笋 10 – 12条(每条切成2英寸)
番茄丁 ½ – ⅔ 杯
帕玛森芝士(磨碎) 适量

步骤:

  1. 将一锅水煮滚后,再调成小火。
  2. 用另一个炒锅,加入2汤匙牛油和橄榄油,把火调至中大火,让牛油融化。
  3. 爆香蒜茸和辣椒粉(约2分钟)。以盐和花椒粉为虾仁调味,再将虾仁放入炒锅翻炒至熟。将虾仁取出,置旁待用。
  4. 用同一个炒锅加入白酒、柠檬汁和芦笋,将材料煮滚后,再加入另一半牛油。待牛油融化后,加入虾仁和香芹后,翻炒均匀。
  5. 将步骤(1)的火调至大火,将水煮滚。加入意大利细面煮至约2 – 3 分钟至al dente(具嚼劲),再将面取出沥干,加些许橄榄油,拌匀。
  6. 将虾仁和芦笋与面条一起拌匀,再加入蕃茄丁。用盐和胡椒粉调味,也可依照个人喜好,酌量加入橄榄油。
  7. 最后撒上帕玛森芝士。摆盘前加柠檬片装饰,即可上桌。

Recipe: Asparagus & Shrimp Angel Hair

Ingredients (Portion for 4):

Angel hair pasta 336g
Butter 56g (divided into 2pcs, 28g each)
Olive oil 2 tbsp
Minced garlic 2 tbsp
Red chilli flakes ¼ tsp
Shrimp (peeled & deveined) 450g
Salt Adequate
Pepper Adequate
White wine 125ml
Lemon juice ½ lemon
Parsley (chopped) 3 tbsp
Asparagus 10 – 12 pcs, 2 inches per pc
Tomato concasse ½ – ⅔ cup
Parmesan (grated) Adequate

Steps:

  1. Bring a large pot of water to a boil. Reduce the heat to a low simmer while preparing the shrimp.
  2. In a sauté pan, melt 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
  3. Sauté the garlic and red pepper flakes for about 2 minutes. Season the shrimp with salt and pepper and add them to the butter and garlic mixture. Cook the shrimp for about 2 minutes on each side, or until they have turned pink. Remove the shrimp from the pan using a slotted spoon. Set aside and keep warm.
  4. Add the wine, lemon juice and asparagus to the pan and bring to a boil. Add the other half of the butter. When the butter has melted, add the shrimp to the skillet along with the parsley. Stir to combine and remove from the heat.
  5. Bring the pot of water in step (1) to a boil. Add the pasta and cook until al dente (about 2-3 minutes). Drain the pasta and return it to the pot. Toss with a drizzle of olive oil.
  6. Toss the shrimp and asparagus with the cooked pasta and add the tomatoes. Season with salt and pepper and drizzle with additional olive oil if desired.
  7. Lightly sprinkle with grated Parmesan to serve and add a lemon wedge while plating.
